Ingredients


30g Dried Shiitake Mushrooms
250ml Vegetable Stock
250ml Water
1 Teaspoon Sake (Rice Wine)

Step 1


Soak the mushrooms in hot water for about 20 minutes. Drain, but reserve the liquid.

Step 2


Cut off the mushroom stems and discard them.

Step 3


Add the mushrooms to the vegetable stock and the reserved liquid in a saucepan and cook over a low heat for 30 minutes or until the liquid has reduced by half.

Step 4


Add a teaspoon of sake and then remove from heat. Let the mushrooms cool in the liquid before using.
