Makes 8 large or 12 dainty portions
3 cups wheat flour
3 tablespoons brandy
1/2 cup melted butter
1 cup chopped almonds
1 teaspoon vanilla essence
1 teaspoon almond extract
1/2 tablespoon baking powder
1/4 teaspoon pouring salt
1 cup white or brown sugar
3 large eggs
Preheat the oven to 180°C. Mix sugar and butter in a bowl. Add the brandy, almond extract, vanilla essence, chopped almonds and eggs. Beat together until thoroughly mixed.
Add the flour, baking powder and salt and mix well. When it is combined, make three small loaves. Place these loaves onto a greased baking sheet and bake for 25-30 minutes at 180°C.
Remove the loaves from the oven and allow them to cool for 5 minutes. Once cooled, slice the loaves diagonally and across to create triangular biscuits.
Place the triangular biscuits on the baking sheet and return to the oven, cooking them for 20-25 minutes until both sides are a warm brown colour.
Serve warm with ice cream or allow the biscuits to cool completely before storing in an airtight container.
