Prep: 25 minutes
Marinating: 45 minutes
Serves 4-6
3 cucumbers
2 tablespoons white vinegar
2 teaspoons white sugar
1-2 tablespoons chilli sauce
½ red onion, chopped
½ cup fresh coriander leaves
1 cup unsalted, roasted peanuts, chopped
2 tablespoons crisp fried garlic
½ teaspoon chopped chilli
1 tablespoon fish sauce
Peel (optional) the cucumbers and slice in half lengthways. Remove the seeds with a teaspoon and slice thinly.
Combine the vinegar and sugar in a small bowl, and stir until the sugar dissolves. Transfer to a large bowl and toss with cucumber, chilli sauce, onion and coriander. Allow to marinate for 45 minutes.
Just before serving, add peanuts, garlic, chilli and fish sauce; toss lightly.
